Southwestern Turkey Burgers

Ground turkey is pretty much a staple in my house. It’s so healthy, easy to cook and takes any kind of seasoning you throw at it. Today we’re going southwestern style with a chipotle avocado spread, chili spiced turkey burgers, caramelized onions and charred peppers. This burger is a perfect goodbye to summer or the perfect way to welcome football Sundays. You choose.

Southwestern Turkey Burgers

Ingredients
  • 1 tablespoon unsalted butter
  • 1 large Spanish onion, sliced
  • 1 lb ground turkey breast
  • 1 tablespoon chili powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground garlic
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 avocado, minced
  • ½ teaspoon chipotle in adobo
  • 1 teaspoon lime juice
  • Salt & freshly ground black pepper, to taste
  • 4 whole wheat hamburger buns
  • 1 cup packed baby arugula

Instructions
  1. In a large non-stick pan, add butter and sliced onions. Cook over medium-low heat until onions are soft and golden brown.
  2. In a large bowl, add ground turkey, chili powder, smoked paprika, garlic powder and salt and pepper to taste. Mix meat to evenly disperse spices. Form meat into 4 equal sized patties.
  3. In a large pan, add olive oil over medium heat. Add burger patties and cook until golden brown on both sides and just cooked through, 10-12 minutes. Remove patties from pan and keep warm on a dish covered with aluminum foil.
  4. In the same pan you cooked the burgers, add red and yellow peppers. Cook over medium-high heat until charred and slightly softened, 2-3 minutes. Set aside.
  5. In a small bowl, mash together avocado, chipotle and lime into a spread. Taste and add salt, if needed.
  6. To build burger –> spread avocado mixture on each side of the bun. Top bottom bun with arugula, then the burger, then caramelized onions and charred peppers.
